Ingredients you need to make Mini Peanut Butter Chocolate Chip Muffins: 

  • 1 egg
  • ⅓ cup unsweetened apple sauce
  • 1.5 tablespoon brown sugar
  • 1 teaspoon vanilla
  • ⅓ cup milk I used 1%
  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 tablespoon mini chocolate chips
  • 2 tablespoons Kraft light or Jiffy reduced fat peanut butter melted

How to make Mini Peanut Butter Chocolate Chip Muffins (step by step): 

  1. Preheat the oven to 350F, and spray a 24 mini muffin tin with some nonstick spray.
  2. In a bowl, whisk the egg and brown sugar until it’s lighter in color. Mix in the apple sauce, milk, and vanilla extract.
  3. Stir in the all purpose flour, baking powder, and baking soda.
  4. Fold in the chocolate chips and divide the batter into the 24 mini muffin cups.
  5. Place the peanut butter in a small microwave-safe bowl and heat for approx 60 seconds. Using a small spoon drop small amounts onto each muffin, then use a toothpick to swirl the best you can. Sometimes the PB will harden and that’s ok.
  6. Bake them in the oven for 15 minutes. Let cool and enjoy.
