Ingredients you need to make French Onion Chicken Pasta: 

  • 3 cups onions, chopped 
  • 1 teaspoon olive oil
  • 2 cups pasta, measured dry
  • 2 cups cooked diced chicken, approx 10oz
  • 1 package onion soup mix (55g) 
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • Dash of salt and pepper
  • ¾ cup + 3 tablespoon chicken broth
  • 1 cup shredded light Swiss cheese 

How to make French Onion Chicken Pasta (step by step): 

  1. If you have not cooked the chicken yet you will want to do this first. Cubed, shredded, or rotisserie chicken will work well in this recipe. 
  2. Preheat the oven to 350F degrees. 
  3. Heat the oil in a large frying pan on the stove over medium to low heat. Add the chopped onions with 3 tablespoons of the chicken broth and cook it on the stove until the onions are tender. This will take about 20 minutes. You want to cook them low and slow to get the best flavor out of the onions. Stir it often.
  4. While the onions are cooking, boil the pasta according to the package directions. Drain the pasta and set aside until you’re ready for it. 
  5. Mix the shredded chicken, pasta, onions, onion soup mix, mustard, vinegar, chicken broth, salt, pepper, and ½ cup of cheese together in a large bowl. Spread out the chicken pasta mixture into a sprayed 9×13 casserole dish. 
  6. Cover the dish with foil and bake it in the oven for 20 minutes. Remove the foil and spread the remaining ½ cup of cheese on top. Put it back in the oven uncovered for 5 minutes, or just enough time for the cheese to melt.
  7. Makes 6 servings, each serving approx 7oz.
