Can”t Resist Another Bubble Up! ️I’m back with another bubble up recipe, and let me tell you, this one might just take the crown as my all-time favorite! Remember my wildly popular taco bubble up? Well, I couldn’t resist creating a spin-off masterpiece: the loaded nacho casserole! For those unfamiliar with the term, “bubble up” refers to these casserole dishes where the biscuits magically rise and bake right within the meal, creating a truly beautiful and comforting food experience.

This loaded nacho casserole stays true to my Weight Watcher friendly approach, utilizing the smaller 7.5oz biscuit packs to keep it at a reasonable 7 points per serving. So, if you’re looking for a flavorful, easy-to-make dish that combines the best of both worlds: comfort food and convenience, this loaded nacho casserole is the perfect answer. Ingredients you need to make Loaded Nacho Casserole: 

  • 1 (7.5 oz) Great Value package biscuits 
  • 1 lb cooked extra lean ground beef
  • ½ teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon red pepper flakes
  • Dash of salt and pepper
  • ⅓ cup salsa
  • 25 g tostitos chips crushed
  • 1 red onion diced
  • 1 tomato diced
  • 2 jalapenos diced
  • 1 bunch green onion diced
  • ⅔ cup light reduced fat shredded cheese

How to make Loaded Nacho Casserole (step by step): 

  1. Preheat the oven to 350F. 
  2. Cook the ground beef in a pan on the stove, drain the fat, and set aside in a bowl. 
  3. Cut the 10 small biscuit pieces into 6 small pieces each and spread them out in the bottom of a sprayed 9×13 casserole dish.
  4. Pre-bake biscuit pieces for 12 minutes, then remove them from the oven.
  5. In a bowl, mix the ground beef, spices, and salsa together
  6. Dice the onion, tomato, jalapenos, and green onion. Place the chips in a small zip lock and crush them up.
  7. Use half of the ground beef mix and spread it over the biscuits. Sprinkle half of the chips on top of the meat, then layer half of the onion, tomato, jalapenos, and ⅓ cup of the cheese. Repeat with remaining meat, chips, and veggies. Leave the green onion and remaining ⅓ cup of cheese to the side.
  8. Bake in the oven for 25 minutes. Remove and sprinkle the remaining cheese and the green onion on top and return to the oven for 15 minutes.
  9. Cut into 6 servings and enjoy!

  • If you don’t want it spicy, swap the jalapeno peppers for green peppers and use only ½ teaspoon red pepper flakes.
