The ground turkey keeps these light and healthy, instead of weighing you down like a full-fat ground beef or pork sausage would. Store-bought puff pastry is easy, inexpensive, and tasty, so I recommend using it over homemade. It gives these rolls a buttery, crunchy bite.
The thyme and sage are the key ingredients in this so don’t skip it. It gives that “hmm what is that I’m tasting?” flavor that makes people constantly ask for the recipe. The herbs allow you to use a lean ground turkey instead of an actual sausage and no one will know the difference. No one will be disappointed when you show up with these!

When feeding a crowd, you want something that’s easy to make. Turkey sausage rolls are just that, but they’re healthy as well. No one has to know! It ensures you have something to munch on during the party that would ruin your goals.
Turkey Sausage Rolls look like you put in a lot of effort.
Even though they’re easy, they bake up beautifully and can be presented in a way that makes you look like a wiz in the kitchen. Get ready to make these for all parties, because people will be begging for them every time.
They are very balanced nutritionally.
Each sausage roll has 4 grams of fat, 5 grams of carbs, and 4 grams of protein. You can’t get more balanced than that!
Ingredients you need to make Turkey Sausage Rolls:
- 1 lb ground turkey weighed raw
- 1 egg
- ½ cup bread crumbs
- 1 teaspoon thyme
- 2 teaspoon sage
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- dash salt and pepper
- 1 package of puff pastry
- 1 egg beaten with a splash of milk or water (Egg wash for brushing on top ) *you won’t use much of it so I do not include it in the ingredients when I am figuring out the points.
How to make Turkey Sausage Rolls (step by step):
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- In a bowl, mix the raw ground turkey, egg, breadcrumbs, and seasonings.
- Flour the surface of a counter a little and roll out the puff pastry dough. Depending on what brand you use, it will have 2 sheets that are around 10×10. I rolled them out a little to get them to more of a 10×12 rectangle and then cut each piece into 3 long strips, giving me 6 strips in total.
- Separate the meat mixture into 6 equal portions and press each portion onto each pastry strip. You want it the full length of the pastry strip, but not the full width.
- Fold over the pastry vertically and use a fork to seal the ends.
- Use a little egg/milk egg wash to brush them, then cut each long piece into 6 pieces. The easiest way to do that would be to cut each in half, then each half in 3. This way they will all be about the same size. You should have 36 pieces in total.
- Place on the cookie sheet lined with parchment paper and make sure to keep them an inch or two apart.
- Bake for 20-25 minutes or until the pastry is golden brown. Let cool for 5 minutes, then serve.

Different ways to change up this recipe:
- If you have the points for it, you could use a fattier meat like beef or pork sausage. But there’s really no reason to change these up when they taste this good!
- You could make a taco turkey pocket by using taco seasoning instead of the herbs and spices listed. It’ll save you time, and still be delicious.
- Ranch seasoning would also work in this recipe! Use lean ground chicken mixed with a bit of buffalo sauce and ranch seasoning and you’ve got a delicious buffalo chicken ranch roll.
Tips and Tricks for Making Turkey Sausage Rolls:
- I used the pre-made puff pastry to keep things quick and easy, and there are a few different brands out there so points could vary. I can only give points based on what I used. Double check your recipe and ingredients to stay accurate.
- Store any leftovers in the fridge for up to 5 days. They also will freeze well, so you could store them in freezer zip lock bags for up to 3 months. To re-heat, pop them in an air fryer or oven at 400 degrees for 3-5 minutes – until heated through.
