One large serving of this Apple Cranberry Oatmeal Bake will only give you 15 grams of sugar, compared to the 30-40 grams that are in other baked oatmeal recipes. There’s no reason to start your day with that much!

Ingredients you need to make Apple Cranberry Oatmeal Bake:
- 2 eggs
- 2 tablespoons brown sugar
- ⅓ cup plain nonfat Greek yogurt
- ⅓ cup unsweetened apple sauce
- 1 ¼ cup almond milk
- 1 tablespoon honey
- 1 teaspoon vanilla
- 2 cups Quaker quick oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 cup fresh cranberries
- 1 heaping cup of diced apple (about 1 large apple)
- ½ tablespoon white sugar
- ¾ tablespoon all purpose flour
- 1 teaspoon light butter, melted
How to make Apple Cranberry Oatmeal Bake (step by step):
- Preheat the oven to 375F and spray a baking dish with nonstick cooking spray. (I used a round 9″ dish).
- In a bowl, whisk the eggs, add in brown sugar, and mix well. Stir in the apple sauce, nonfat Greek yogurt, milk, honey and vanilla.
- Gently mix in the oats, baking powder, cinnamon, and nutmeg. Once it’s all combined, fold in the cranberries and apples.
- Pour the mixture into the baking dish.
- In a small bowl, mix the white sugar and flour together, then add in the melted butter and stir until a crumble forms. Sprinkle the crumble on top of the batter.
- Bake the oatmeal in the oven for 42-45 minutes. Start checking it around 30-35 minutes in case your oven burns hotter than mine.
- Makes 6 large servings. I cut mine like you would a pie. Serve warm, and enjoy!

- Using pumpkin pie spice instead of cinnamon and nutmeg, and swapping the applesauce with pumpkin puree would be delicious in this oatmeal bake. Pumpkin goes well with apple and cranberry.

Tips and Tricks for Making Apple Cranberry Oatmeal Bake:
- If you don’t have almond milk, you can substitute for regular milk or any other kind of milk.
- Store this apple cranberry oatmeal bake in a sealed container in the fridge. It will also freeze very well once it’s baked.
- I wouldn’t suggest a deep pan for baking, like a loaf pan. It would bake unevenly. Something shallow, like a pie dish or 8×8 square pan, is best.
