When preparing for game day or a tailgating party, it’s less about the sport and more about the food! At least, that’s what I think. If you love planning fun appetizers for your game days or just need one to take with you, check out my buffalo chicken squares. These are so easy to make and easy to serve. The whole recipe makes 20 servings too, so you can feed a crowd.

I used my own Zero Point ranch recipe to help keep the points low, and if you are not huge on spicy food, feel free to lower the amount of Frank’s hot sauce. They definitely have a nice kick to them, but it’s easily adjustable. Buffalo Chicken Squares are perfect for entertaining because they only require six ingredients – so you don’t have a huge grocery list to hunt down. Saves you time and energy! Buffalo Chicken Squares are so easy to make. 

Since you’re using pre-made dough (the Pillsbury crescent dough) you don’t have to worry about making a huge mess. It’s a quick and easy process that doesn’t wreck the whole kitchen. 

It’s easy to change the heat level. 

Whether you want more or less heat, you can easily adjust the amount of hot sauce. So don’t let the “buffalo” part of these deter you if you don’t like spicy food. Just adjust it to your preference. 

Ingredients you need to make Buffalo Chicken Squares: 

  • 2 packages Pillsbury reduced fat crescent rolls
  • 3 cups cooked, shredded chicken
  • 6 oz softened, light cream cheese
  • ½ cup ranch dressing (can use my Zero Point Ranch)
  • ⅓ cup Frank’s hot sauce
  • 1 cup reduced fat shredded cheese

How to make Buffalo Chicken Squares (step by step): 

  1. Preheat the oven to 350F, and spray a cookie sheet with some nonstick cooking spray.
  2. Roll out one of the crescent doughs onto the cookie sheet and pinch any open seams closed. Bake it in the oven for 12 minutes. You are just baking the one croissant dough first – don’t bake both!
  3. Remove it from the oven and let it cool.
  4. In a bowl, mix together the cream cheese, chicken, ranch, hot sauce, and shredded cheese.
  5. Spread the mixture evenly onto the baked crescent dough, top with the other crescent dough, and pinch all the seams together. Brush with a little egg wash and then bake in the oven for approximately 28 minutes or until the top dough is golden brown and baked through.
  6. Let it cool for 10-15 minutes then cut into 20 squares. I did 5 across and 4 down.

5 points per serving based on the WW app recipe creator if you use regular ranch dressing. 4 points per serving if you use Zero Point Ranch.

Different ways to change up this recipe: 

  • Make some extra Zero Point Ranch to dip them in! If you’re a blue cheese fan, I suggest this Greek yogurt-based blue cheese dressing
  • You can add sliced pepperoni to this instead of chicken for a pizza version. 
  • Extra lean ground beef or ground turkey would work well in this recipe too. 

Tips and Tricks for Making Buffalo Chicken Squares: 

  • Store these buffalo chicken squares in the fridge if you have leftovers. 
  • Alternatively, you can also freeze them and they will keep for up to three months. Just make sure to wrap them tightly with saran wrap. 
  • To reheat, pop them in the oven or air fryer so they crisp back up. 
  • Using Zero Point Ranch rather than store bought ranch only saves you one point, so if you’re in a pinch, store-bought ranch is just fine. You could look for a fat-free version at the store to help with points too.
