Ingredients you need to make Pizza Muffins: 

  • 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp garlic salt
  • 1 tsp Italian seasoning
  • 3/4 cup 1 % milk 
  • 1 egg
  • 1 Tbsp finely grated parmesan cheese
  • 1/3 cup reduced fat shredded mozzarella
  • 1/4 cup shredded asiago cheese
  • 3 slices cooked Oscar Mayer center cut bacon (or you can use turkey bacon or bacon crumble usually found in the salad dressing aisle)
  • 20 small slices pepperoni (56g)

How to make Pizza Muffins (step by step): 

  1. Preheat the oven to 375F and spray a mini muffin tin with nonstick cooking spray.
  2. In a small bowl, whisk together the egg and milk. Then in a separate bowl mix the flour, baking powder, garlic, and Italian seasoning together. Add the egg and milk mixture to the dry ingredients and mix well.
  3. Stir in all of the cheeses.
  4. Cut the pepperoni into small pieces and crumble the cooked bacon slices. Mix them both into the batter.
  5. Divide the batter over the 24 mini muffin tin, and sprinkle with more Italian seasoning.
  6. Bake in the oven for 20 minutes.
  7. Carefully remove from the tin using a knife around the edges. Serve warm with some marinara sauce or pizza sauce for dipping.

Different ways to change up this recipe: 

  • This is the best muffin recipe to hide veggies in. With all of the cheese and the spicy pepperoni, you’re not going to taste the veggies if you use bland ones like zucchini, cauliflower, or yellow squash. Make sure to shred the veggies and squeeze any water out with paper towels before adding to the muffin batter. 
  • If you need to omit the egg, increase the milk to 1 cup and increase the baking soda to 1.5 teaspoons. 
  • Use ground turkey spiced with dried sage if you don’t like pepperoni. It will make it taste like turkey sausage pizza muffins. 
  • A great addition to this recipe is chopped fresh basil, roasted garlic, black olives, or even green olives. Anything that you like on your pizza! 
  • Use turkey bacon and/or turkey pepperoni to lower the points – although these already are 2 points per muffin. It doesn’t get much lower than that! 

Tips and Tricks for Making Pizza Muffins: 

  • Like most muffins, these freeze very well. Just make sure they are all the way cooled before wrapping and storing them in the freezer. 
  • When looking for a marinara sauce or pizza sauce to use for dipping, find a “no sugar added” sauce. Prego makes a great one. You don’t need the extra sugar in regular pizza sauce. It will save you calories and it still tastes great.
