Two Ingredient Pie Crust Apple Pie  Recipe enthusiasts

[ad_1]

With the holidays approaching, I have been wanting to try out a homemade apple pie using the two ingredient dough. For those that don’t know, Two Ingredient Dough is just a mixture of self-rising flour and plain nonfat Greek yogurt. It is Weight Watchers friendly since the yogurt is a zero-point food. There are so many things you can create with the dough – I’ve made cinnamon rolls, pizza, and breakfast casseroles. Now, it’s time to try a pie. This Two Ingredient Pie Crust Apple Pie does not disappoint! It’s much easier to make than I thought it would be and comes out absolutely delectable. Your house will smell amazing! It”s not a typical flaky pie crust by no means because there is no butter. So if that is what you are after, you might not enjoy this but it is a great alternative and keeps points nice and low.

Three reasons why you need to make this recipe!

One slice of pie is just six Weight Watchers points.

This two ingredient pie dough is packed high with freshly sliced apples, cinnamon, and just a touch of sugar. The end result is a yummy dessert for just a few points.

It’s a great dessert to start out with if you are trying to lower your sugar intake.

Two Ingredient Pie Crust Apple Pie has just the right amount of sweetness, without a ton of sugar. Most of the sugar comes from the apples. But apples also have fiber, so you don’t have to worry about spiking blood sugar.

It’s easier than making a real pie crust at home.

Pie crust can be intimidating, but the fact that this is just two ingredients makes it super easy. You don’t have to worry about getting a perfectly flaky crust.

Ingredients you need to make Two Ingredient Pie Crust Apple Pie:

  • 1 cup self rising flour
  • 1 cup nonfat plain Greek yogurt
  • 8 cups of diced apples
  • 2 tablespoons fresh lemon juice
  • ⅓ cup packed brown sugar
  • 3 tablespoons white sugar
  • ¼ cup all purpose flour
  • 1.5 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • Egg for brushing the top of the pie
  • Coarse sugar for topping (optional, but doesn’t add points)

How to make Two Ingredient Pie Crust Apple Pie (step by step):

  1. First, make the two ingredient dough. Mix the 1 cup of flour with the nonfat Greek yogurt. Mix it well and form into a ball. Seal with some plastic wrap and refrigerate for 30 minutes.
  2. While the dough is chilling, peel and dice the apples.
  3. Preheat the oven to 375F.
  4. Separate the dough into 2 balls – mine weighed about 7oz each.
  5. Dust a flat surface with some flour and roll out the first dough ball. Make sure to roll it out as thin as you can. Spray a 9-inch round dish with some nonstick cooking spray and then place the rolled dough into the dish. Pre-bake the bottom shell for 5 minutes.
  6. In a bowl, mix the diced apples with the lemon juice, brown sugar, white sugar, flour, cinnamon, and nutmeg.
  7. Let the bottom shell cool down for a few minutes. In the meantime, roll out the top piece of dough.
  8. Place the apples into the dish on the bottom shell, then cover it with the top dough layer. Make a few cuts in the middle of the rolled out dough to let some air out while baking.
  9. Brush the top of the dough with some of the whisked egg and sprinkle coarse sugar on top. Bake the pie in the oven for 45 minutes.
  10. Let it cool for 5-10 minutes before serving. Enjoy!

Tips and Tricks for Making Two Ingredient Pie Crust Apple Pie:

  • Pro tip for the two ingredient dough: it is usually equal parts flour to yogurt but I find just a tiny less yogurt helps it not be too sticky. You can always add more if you need it, so I suggest starting with less than 1 cup.
  • Refrigerate or freeze any leftovers you have. The dough will not hold up as regular flaky pie crust would, so you may need to pop it back in the oven to crisp it up some before eating leftovers.
  • At 45 minutes in the oven, the apples will still have a slight crunch to them. If you prefer super soft apples, then you can pre-cook them in the oven for about 15 minutes before placing them in the pie crust. If you cook the pie longer than 45 minutes, it’s likely to burn.
