These cookies are big, and you get 24 of them out of one recipe. Leave a few out for the week, and store the rest in the freezer to warm up an extra cold wintery day. 

It’s easy to adjust to your ginger preference. 

The ginger in this isn’t too spicy since I’ve only used a teaspoon. If you like a ginger kick, add a bit more ginger!

Ingredients you need to make Weight Watchers Gingerbread Cookies: 

  • 1 ¾ cup all purpose flour
  • 1.5 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • ¼ cup light butter 
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 egg
  • ¼ cup molasses
  • 1 teaspoon vanilla
  • 1.5 tablespoons white sugar for rolling dough in
  • 2 tablespoons white chocolate chips for drizzle 

How to make Weight Watchers Gingerbread Cookies (step by step): 

  1. Using an electric mixer, cream together the butter, ¼ cup white sugar, ¼ cup brown sugar, and the egg.
  2. Add in the molasses and vanilla extract and mix well.
  3. Slowly stir in the spices and all purpose flour. Form the batter into a dough ball, cover with saran wrap, and refrigerate for at least 1 hour.
  4. Preheat the oven to 350F, line a cookie sheet with parchment paper, and lightly spray it with nonstick cooking spray.
  5. Place the 1.5 tablespoons of white sugar onto a flat surface (I used a plate).
  6. Use about 1 tablespoon of dough for each cookie and roll it into a ball, roll the dough into the sugar, and then flatten it into a cookie. Not too flat, you want them fairly thick still because they will spread some in the oven.
  7. Bake for 10-12 minutes, then let the cookies cool.
  8. If using the white chocolate drizzle, place 2 tablespoons of white chocolate chips in a small ziplock bag. Microwave for 30 second intervals turning the bag over each time, until the chocolate has melted. Cut off a tiny tip and drizzle it onto the cookies.

  • The white chocolate is optional and will decrease the points some if you leave it off. But I love the sweetness it adds to the ginger, so I definitely recommend it!
